Have you ever seen a movie, where you see it once and you thought wow, that was a freaking good movie, but i dont ever want to watch it again, well that is a 1 watch movie.
A good example for these are:
Borat Eraserhead Elephant 12 monkeys

Easy, Schindler's List. An amazing movie, but not one that I want to watch again. Oh, and Monster's Ball. Really good, but very hard to watch, especially the Billy Bob Thornton/Heath Ledger side of the story.

Children of Men. Watching it again would really lose most of the impact, and without that punch to the gut it's a nothing film. (Totally a matter of personal, subjective opinion. Some will enjoy watching it again for the visual styling and so on.)
I don't have many of these, because I generally don't watch any movie I don't think I'm going to want to see multiple times. Sometimes I am wrong, but usually I'm either in the "Yay! Let's buy it and watch it dozens more times!" camp, or the "Ugh, I never should have watched it to begin with" camp.

American Beauty was a good one, but not a movie I'd easily be talked into repeating. Same goes for Brokeback Mountain, Million Dollar Baby, Angela's Ashes and essentially any other movie that wants to put my emotions through the ringer.

Oh man, Million Dollar Baby! Man, that movie was hard to watch. I could actually see myself watching Schindler's List again before I watched that.
Children of Men, on the other hand, is in my 'want to watch it until I see it in my dreams' list.

One of the main reasons why I've become a lurker is that I've transformed into a 1-watch-movie watcher almost exclusively. That and the fact that I haven't watched anything recently anyhow, and disillusionment in general. I'm seriously thinking of getting rid of my DVD collection...

Most war/Holocaust/people dying as the main plot movies are one watch movies for me. Except Schindler's List, which I've watched 7 or 8 times.
Another category? Documentaries. We watched An Inconvenient Truth the other night, and although I thought it was very good, I don't feel the need to rewatch it. Although I do feel the need to rewatch Supersize Me! as I've been going to McD's....

I think Brian's Song is my big 1-watch, because for me it was incredible, but also amazingly sad. I've never cried so hard at a movie, amd I don't want to again.
But generally I'm not a 1-watch type. If a movie is good, I like to know every line and shot used in there. I want to be able to hum the score and pick out every little detail. Unless it's a really crappy movie, then I never want to see it again.

When I see a one watch movie, it's because I had to see it to satisfy my curiosity--so it's good that I saw it, if not actually a good movie--then hated it (e.g., Bowling for Columbine, Fahrenheit 9/11, Super Size Me, Triplets of Belleville).
In a stricter sense, one watch movies for me would be most of the MST3Ks and Chaplin movies.

I hate to admit it... but I liked American Beauty (I hate it as much as I like it - equally) and I thought Bowling for Columbine was genius. BfC is more than a 1-watch movie. But Fahrenheit-911, as much as I agree that Bush is a... , was nearly incomprehensible. Let alone the reaction it got in my house when I purchased it, my mother (of all people) called me a traitor. I got the DVD for $4 and the special features were better than the movie. Still haven't seen BBM yet. I've heard the sex scenes are pretty steamy...

The Passion of the Christ: 'Twas curiosity alone that got me to see it the first time. I understand why people with a healthy amount of faith about them would watch it, but to me it was just ultra-violent for the sake of ultra-violence.

Well... Mel Gibson is insane. I believe he thought he was doing it for the believers' sake...
Wait a minute... I love ultra-violence. Curse you, MPAA, I wanted to buy Passion of the Christ: Unrated DVD!

They actually did release an unrated version, "The Definitive Edition". It is exactly the same length as the theatrical cut, so I don't know what's different, though. I'm pretty sure that the stuff with the nakedness and the bong that DarthShady suggested stayed on the cutting room floor, though.

I really wanted to see them turn the crucifiction into a whacky toga party at the apostles' frat house.
