Oooh, I just had fun. I went to one of the last used bookstores around here and loaded up on those cheesy movie novelizations that I promised to read and review for my new year's resolution. But I couldn't stop with just 10 -- there were too many good ones that I had to cover. So I got 23.
I won't spoil what they are for you... they're a good mix of genres, good and bad films, and some movies you would've never guessed made it to book form. My personal favorite of the batch, however, is Rocky II. Written by Sly Stallone. I can't wait.

I have the novelization for "Can't Hardly Wait" and if memory serves it actually detailed some of the deleted scenes that I'd heard about but didn't make it to DVD.

I recently read the novelized classic Star Wars Trilogy, which is surprisingly short (all three episodes in one standard novel-sized book).
Each episode was written by a different author, the least imaginative of which was (SURPRISE!) George Lucas' take on A New Hope. Man. He's a terrible writer. I rolled my eyes over and over again reading his own maligning of the movie.
The writing for Empire and Jedi were both pretty good, though! Interesting to get a writer's perspective on what was going through Vader's head in all the key scenes, particularly at the end of RotJ.

I know I read those way, wayyyy back in the mid-80s, and yeah, Lucas writes like he's slamming a dead cat on a typewriter.

"Sounds like somebody's hitting a baby with a cat."
One of my favourite quotes ever. And you are correct, it is as you describe.
