As Dune is my favourite book (and I have a lot of love for the movie, even if it is sucky ;D), I am here to clear up a few things;
1. The Bene Gesserit (those bald women) have been breeding the KH (Kwisatz Haderach) for millenia. Essentially, the spice affects men and women differently: women see the past (by travelling down their own ancestral memories) and men see the future. The BG have been using a massive eugenics program to breed a male whom can do both.
2. The BG have spent that length of time spreading religious prophecy amongst the Known Universe, placing BG sisters in high positions of society (so if they turn up on a planet, they can instantly manipulate the society through its prophecy). The KH is also a part of this.
3. The 3 hour version is horrible. Its badly edited (the soundtrack, one of the movie's actual good points, is somewhat butchered) and some of the seens were removed for good reason (does ANYONE want to see Gaius Helen Mohiam flying round in a spaceship?).
The best version is the anniversay edition, which is the theatrical release with a load of deleted scenes. Meaning you can watch them at your own leisure (and see why THEY were deleted too ).
4. Yes, the movie loses ALL of the intrigue/politics and all of the ecology. So kinda the point of what Frank Herbert was trying to get across ...
And honestly, the weirding way? In the books, this is a highly advanced form of martial art which the BG have developed through millenia of training. The BG can manipulate their own physiology through intense conditioning (so much so that they can choose whether or not to get pregnant and the sex of the child).
In the movie, the weirding way is translated in to "wikid-cool ghettoblaster guns".
5. Before the spice melange was discovered, human society used highly sophisticated computers to travel instellar distances. The Known Universe was also ruled by artificial intelligence which enslaved humanity and when humanity got fed up with it (hopefully in a completely non-Matrix fashion), it was ruled that "no machine shall be created that could mimic a man's mind", so that they could never be enslaved again.
It was the Spacing Guild which discovered that spacefold was possible using the spice, which is what allowed their monopoly/ascent to power in the three pillared society (effectively taking the place of the merchant class).
