Its been awhile since I played a Resident Evil game... last one was Code Veronica when it came out on Dreamcast. I do have a copy of RE4 that I haven't gotten around to yet though.
I downloaded the demo for RE5 and was surprised and kind of annoyed that you can't move when you are aiming... anyway.. the demo was not bad, not great.
This is like the biggest hyped game right now, has anyone else tried it?

Try playing that copy of RE4, see what you think of it. Then, imagine if your inventory screen didn't pause the action. That's RE5 in a nutshell. As tense as 4 was, I could pause the game anytime I wanted to heal, sort, and reequip my weapons all I wanted. I'm sure you can pause in RE5, but you have to reload, heal, and equip in real time now.
As for not being able to shoot while moving, that's always been in the series. And it's part of how it generates tension. You can't run and gun like some kind of shooting prodigy. You're a trained soldier, true, but not some crazy Schwarzenneger ideal. You have to take your time to make good shots. It's not completely realistic, but no game ever has been.
But play RE4 and see how you feel. It redefined the RE series gameplay, and RE5 is only augmenting that model, not changing it.
